Crab cakes with spinach
Lump crab cakes from Whole Foods served over bed of spinach
Salmon and potatoes with kale salad
Marinated salmon from Whole Foods with potatoes
Judy’s special potatoes
Start with microwavable new potatoes (5 ½ minutes in microwave)
Cut in half in pie plate and add butter
Add xxxx
Serve salmon on top of potatoes with Lidia’s kale salad as side dish
Eggplant parmesan, pizza and tomato-watermelon salad
A large plate with left-over pizza, eggplant parmesan, and fresh watermelon salad.
Our watermelon salad
1 small seedless watermelon cut into chunks, about half inch cubes or so.
1 package of cherry tomatoes cut in half
1 package of mozzarella cheese cut into half inch cubes
Fresh basil, thyme, and oregano left in large pieces
Drizzle of white truffle olive oil

Kitchen Sink Sandwiches
We love sandwiches, and the way Judy makes them they are dinner by themselves. They are also so messy they are often best eaten over the sink although I usually eat them hunched over a plate – and still mess up the shirt I am wearing.
Our Tomato Sandwich
Toasted seeded bread (we love Seeduction from Whole Foods, why anyone would use store-bought white bread eludes us, but nostalgia is what it is, I guess).
Thick slices of best tomatoes we can find. When we have been to the Farmers’ Market we love Cherokee Purple.
Vegenaise on both pieces of toasted bread.
